Rainbow Gardens Thai Sweet Chili Sauce
2 Cups Water
2 Cups Granulated Sugar
1/2 Cup Rice Vinegar
1/4 Teaspoon Sea Salt
6 Cloves Garlic (around 3/4 oz.)
6 - 8 Hot Thai Chili's (This is HOT, Use fewer for less intense heat)
You should be able to get these fresh at your Asian market. If not, your Asian market will sell some dried. Also, you can use red serrano peppers or red jalapeno peppers.
1 Heaping Tablespoon Shallot (Around .5 oz.)
2 Tablespoons Fresh Ginger Puree (around .75 oz.)
1/4 Teaspoon Orange Zest
2 Tablespoons Fresh Squeezed Orange Juice
