EKMEK KATAIFI (ANGEL-HAIR)

400g kataifi
1 cup pistachios, chopped
1/2 cup almonds, chopped
65g butter, melted

For the Syrup

3 cups water
2 cups sugar
1 cinnamon stick
3 slices of lemon

For the confectioners cream

3 cups milk
6 tablespoons icing sugar
Zest of one lemon
2 tablespoons plain flour
2 tablespoons corn flour
1 teaspoon vanilla essence
2 eggs
15g butter
pinch of salt

For the Chantilly cream

600ml double cream
2 tablespoons icing sugar
2 tablespoons Cognac or Brandy
