Serves 6 people
6-8 Easter eggs red
2 cups. tea mayonnaise
2 tsp. tablespoon capers xalmyrismeni
2 cooked carrots, very finely chopped
3 tsp. tablespoon dried tarragon
20 black olives for decoration

Take the capers and dry thoroughly on absorbent paper towels. With a very sharp knife cut it into small pieces. To throw into a bowl (keep a few whole for decoration).
Pour in the same bowl and very finely chopped carrots. Mix well the two materials. Add the mayonnaise. Stir and then add the tarragon. Peel the Easter eggs from shell and cut in half.
Place them on a platter, a side by side with the cut part down.
Using a spoon pour the mayonnaise mixture the chopped eggs.
Decorate with capers and olives and serve.
