Shrimp with mushrooms & vermicelli Ingredients 15 large peeled raw shrimp 300 gr. vermicelli (cut into two pieces) 250 gr. chopped fresh mushrooms and saute 1 red pepper, cut into sticks 1 green pepper, cut into sticks 1 yellow pepper, cut into sticks 1 onion cut into large frames 2 cups. chicken broth 1 cup white wine 2 chopped spring onions ½ k.g crumbled oregano 1 k.g ground saffron threads 2 k.s sesame oil ½ k.g rubbed basil Salt / pepper
You put in a pot of chicken broth and wine. Just boil add the saffron, stir and let the mixture aside. Heat the sesame oil in a shallow pan and saute over medium heat the vermicelli until you get color. Add the shrimp, peppers, onions, mushrooms and sauté well. Pour the broth with saffron, oregano and basil and allow the mixture to heat, stirring regularly until the cooked noodles and the absorbed liquid. Sprinkle with green onion and serve immediately.
