1 tablespoon olive oil 1 small onion 1 tablespoon chopped fresh ginger 1 tablespoon curry powder 1 can of 400 gr. cocoanut milk 8 large shrimp, cleaned 2 tablespoons chopped fresh cilantro
Heat the oil in a large heavy saucepan over medium-high heat. Add the onion, saute until tender, about 4 minutes. Add the ginger and curry and sauté for 1 minute. Pour the milk, stirring cocoanut. Simmer for 2 minutes. Add the shrimp until it whitens the center, about 3 minutes. Pour and stir in cilantro. We put salt and pepper to taste and serve. |
