Recipe Ingredients 1 tablespoon butter 2 tablespoons olive oil 2 onions chopped 1 ½ cups oatmeal 2 ½ cups boiling water 2 tomatoes chopped 3 green peppers chopped ½ tablespoon tomato paste 1 tablespoon dried mint ½ tsp chilli flakes ½ teaspoon sumac (optional) 1 teaspoon dry basil 1 ½ teaspoon salt 1 pinch black pepper Recipe Instructions We put in a colander to rinse the bulgur and thoroughly with tap water. Leave aside to dry. In a saucepan melt butter with oil over medium heat. Sauté onions until soft for 3-4 minutes. Add the tomato paste and cook for another 6 minutes. Pour the oatmeal and stir. Add tomatoes, all spices and salt. Pour water in pan and cook until you save the liquid and the bulgur is tender for about 20 minutes. Remove from heat, add the peppers cover with a towel and leave for 15 minutes before serving.
