Noodles with shrimp and soy sprouts

Prepare the noutl according to package directions ( usually soak briefly in hot water) or boil the spaghetti in salted water . Drain and keep aside. Peel the shrimp , leaving the descenders in place. Heat half the oil well in a hot wok or large deep skillet , put inside the shrimp and cook for half a minute on each side - to be pink. Take them off and keep them aside.

Put the wok the remaining oil , onion , ginger and garlic and stir for 1 minute until it begins to brown the onion . Stir through drained noutl or spaghetti , the shrimp, sherry or wine , soy sauce , vinegar and sesame oil and stir for 1 minute , until heated all good . Take them out on a platter and garnish with green onions if you want the red chilli .


12 ( 1/2 kilo ) not very large shrimp
1/3 cup . oil
1 medium onion in thin slices
1 teaspoon ginger sticks minutes
3 cloves garlic , finely chopped
450 gr . not very fine Chinese noutl ( like thick vermicelli ) - or spaghetti broken
2 kouialies Sherry or dry white wine
1 tablespoon rice vinegar
1 even teaspoon sugar
½ teaspoon sesame oil
1 cup . Fresh soya sprouts ( or 1 cup . well drained canned )
1 cup . fresh scallions minutes , in slices
1 red chilli pepper (Chilli) or 1 piece in minutes diagonal slices ( optional)
