In a saucepan, add the oil, butter, chopped onion and let it brown in a casserole. Add chopped garlic, chopped leek and stir.
In a skillet, add 4 tablespoons oil and saute the minced meat.
Pour the browned meat into the pot and add some tomato paste, the chopped fresh tomatoes, eggplant cubes and cubes of zucchini, chicken broth, coriander, parsley, salt, chilli pepper, stir and serve in a platter.
Fry in oil, one egg and serve over cooked meat. |
