Ingredients (for 4 people):
* 1 small duck * 1 kg of white grapes moscatel * 2 carrots * 150 g. of mushrooms * Wine of Oporto * 50 g. of butter * 50 g. of foie-gras * Broth * 1 chalota * Thyme * Laurel * Pepper * Salt * The duck, clean and empty, fills up with a mixture done with a cup of grapes without seeds, butter and foie-gras. Soon one get ready in a refractory source, is surrounded with the carrots, the mushrooms and chalota, all this mincemeat, and dusts off with pricked thyme and laurel, ripening it also with salt and pepper. Next, it is watered with half liter of broth and it is introduced in the furnace until it is roast. In the meantime, they are put to soak the rest of the grapes in two glasses of Oporto. * When the duck is ready, reserve to the heat, mixing the remaining liquid to cook it with the grapes and the Oporto. This preparation puts to the fire about five minutes and, finally, the duck in an ample source appears, serving it warms up it after superficially spilling the grapes and the wine.
