Ingredients for 6 people 1 kilo cuttlefish ½ pound of chard or other greens season 1 onion, chopped 2 cloves garlic 2 sprigs celery 1 tea cup olive oil Salt and pepper
Clean the cuttlefish well, removing the bones and their ink. If large, cut into pieces.
Wash and clean the chard.
In a large skillet add the olive oil and saute onion and garlic. When lightly browned add the cuttlefish first stirring continuously.
Then add the greens, add salt and pepper, add 1 cup water, bring to a boil, cover the pot, lower heat and allow to boil for 1 hour.
Serve hot.
Note. If you want to let the ink of cuttlefish, which generally will blacken the food, but will do so very tasty. |
