Colcannon easy recipe




Colcannon is an Authentic Irish recipe for mashed potatoes


colcannon
4 potatoes
½ chopped cabbage
1 tablespoon chopped parsley
1 onion, chopped
1 beaten egg
4 tablespoons olive oil
Salt and pepper

For the filling:

100g chopped bacon
1 cup chopped mushrooms
2 onions, chopped
1 cup milk
2 tablespoons flour
4 tablespoons olive oil
1 clove garlic, finely chopped
Salt and pepper

Boil the potatoes in a saucepan with water and salt. The crush to make puree (in a blender or a fork). Put them in a bowl.
