Colcannon is an Authentic Irish recipe for mashed potatoes
 4 potatoes ½ chopped cabbage 1 tablespoon chopped parsley 1 onion, chopped 1 beaten egg 4 tablespoons olive oil Salt and pepper
For the filling:
100g chopped bacon 1 cup chopped mushrooms 2 onions, chopped 1 cup milk 2 tablespoons flour 4 tablespoons olive oil 1 clove garlic, finely chopped Salt and pepper
Outturn
Boil the potatoes in a saucepan with water and salt. The crush to make puree (in a blender or a fork). Put them in a bowl. Place cabbage in a pot of boiling water and Scald for 2-3 minutes. The strain and add to bowl with the puree. Together they add parsley, onion, egg, salt and pepper. Stir well until all ingredients come together and cover a baking pan with half the mixture, taking care to cover and edges of pan. Prepare the filling by placing a pan of olive oil, bacon, onion and garlic until golden. Add the mushrooms and cook for 5 minutes to bake, sprinkle with flour, stirring and then slowly pour the milk. Lets get 2 boiled until it thickens. Pour the filling into the pan and cover with the other half a mixture of cabbage, potatoes. Put the pan in the oven for about 33 minutes until golden brown. |
