150 gr. chocolate (high cocoa percentage)
220 gr. cream
130 gr. fresh milk
60 gr. sugar
3 egg yolks

How we do it:
Break the chocolate into small pieces and place them in a bowl.
Heat 220 grams of cream.
We put in the mixer 3 egg yolks, 60 grams sugar and 130 grams of milk. The hit at low speed.
Let the mixer to work and add the warm cream into the bowl of chocolate.
