• 1 / 3 cup oil or butter • 4 Chicken breasts, boneless • 1 / 2 cup dry white wine • 1 / 2 cup chicken broth • 1 / 2 cup mustard • 1 / 4 cup cream • 1 tsp cornflour dissolved in 1 tablespoon water • 2 tablespoons chopped parsley • Salt • Pepper
Description: Saute chicken in olive oil and the two sides. Add wine, broth, salt and pepper. Cover the pot and simmer until the chicken is tender. Mix the mustard with the cream and corn flour. Add to pan along with parsley and continue cooking a little longer, until the sauce thickens. Serve chicken with grilled mushrooms and tagliatelle sautéed in a little butter. If you sprinkle a little paprika.
