Ingredients for 4 servings

* 4 boneless chicken breasts with skin
* 1 teaspoon herbs
* 2 onions, chopped
* 2 cloves garlic, crushed
* 2 large tomatoes, diced
* 1 eggplant cubes
* 2 zucchini diced
* 1 red, yellow, green pepper, diced
* 4 to 5 tablespoons olive oil
* 2 tablespoons chopped parsley
* Salt and pepper



Preparation


Rub chicken breasts with herbs.

Heat the oil in a large skillet.

Saute chicken breasts until browned on both sides.

Remove from pan and keep aside.

Add onions to same skillet and sauté until softened.

Add the garlic, aubergines, courgettes, and peppers. Saute for 10 minutes.

Add tomatoes, salt and pepper, cover pan and simmer over low heat for 10 minutes.

Add chicken breasts, parsley, cover pot and simmer over low heat for 10 minutes.

To serve Put vegetables in bottom of dish and the chicken over them.

Garnish with basil leaves or fresh parsley.
