500 gr. flour
400 gr. confectioners' sugar
240 gr. margarine or butter
4 eggs
120 gr. walnuts
3 bananas, cut into small cubes
150 gr. black currants
1 tbsp baking powder
Zest of 1 lemon
Pinch of salt and nutmeg
Process
In a mixer beat the margarine with the caster sugar until the mixture turns white. Add the eggs one by one and continue beating. Then add the flour, baking powder and stir. Gradually add nuts, raisins, bananas, salt, nutmeg and lemon zest.
Mix well and pour the mixture into a buttered cake tin. Bake in preheated oven at 180 degrees for 35 to 40 minutes. |
